Grilled Watermelon With Honey Balsamic Glaze

by Donna

Hi Everyone,

This bariatric appetizer recipe is something I use for my summer cookouts. Everyone loves it. It’s low calorie with healthy watermelon and the balsamic glaze is excellent. My husband wishes I made this even more.

Large, round watermelon slices, each cut into 4 or 6 triangles, 1-inch thick
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons honey
Balsamic vinegar for drizzling
Chopped scallion, for garnish
Crumbled feta, for garnish (optional)

1. Preheat your grill or barbecue to medium heat. In a small bowl, combine olive oil, honey and balsamic. Brush both sides of each watermelon triangle with the honey balsamic sauce and season all sides with salt and pepper.

2. Place each watermelon triangle on the grill, grilling each side for about 2 minutes, brushing with more honey balsamic glaze if desired. Garnish with chopped scallion and serve immediately with the remaining sauce on the side. Enjoy!
