Here’s another great bariatric recipe for lunch. This ones good because you can take it on the go. It’s a classy little dish with healthy quinoa and vegetables to keep it healthy. I make this dish once very few months. Ever since I’ve had my gastric sleeve I’ve enjoyed making fun dishes like this.
INGREDIENTS LIST FOR THE QUINOA AND CUCUMBER SALAD
Makes 2 jars:
2 cups cucumber, spiralized or julienned
2 cups chopped tomatoes
2 large avocados, diced
1 red onion, sliced
2 cups cooked quinoa (make it the day before and refrigerate overnight)
A handful cilantro, chopped
For the dressing:
1 ripe avocado
1/4 cup white wine vinegar
Juice of one lime
Salt and fresh cracked pepper, to taste
3/4 cup olive oil
